GLUTEN-FREE Apple Mocha MUFFINS
Everything a muffin should be: just sweet enough, slightly grainy in texture & tastes like a FALL DREAM.
Nothing makes me feel more at home than the smell of muffins baking in the oven. Over the years I have gotten quite good at making a wide variety of healthy and delicious treats. The thing about muffins is that they don’t make you feel bad for having a dessert-type pastry first thing in the morning. Not that I don’t sometimes have cookies with my coffee, but you get my point.
Join me in the glory of this wakey wakey style muffin - great with a side of scrambled eggs and an almond latte (or by themselves with butter either standing over the sink in the kitchen or sitting like a civilized human with a plate and a napkin).

To make my most favorite breakfast muffin you will need….
1 1/2 Cup - Gluten-Free All-Purpose Flour
1 1/2 Cup - Brown Rice Flour
1 cup - Coconut Sugar
3.5 tsp - Coffee Grinds
4 tsp - Baking Powder
2 tsp - Cinnamon
pinch - salt
3/4 Cup - Non-Dairy Butter - Earth Balance
1/2 Cup - Maple Syrup
1 Cup - Organic Apple Sauce
3 Organic - Free Range - Eggs
1 - Whole Peeled and Grated Apple
Pour evenly into cute Texas-sized liners
Directions:
-Bake at 350 degrees for 30 minutes or until the top is firm.
-This recipe makes 6 LARGE GLUTEN FREE - “I DON’T WANT TO SHARE” MUFFINS.
-A few minutes after they are removed from the oven please transfer them to a cooling rack.
-Please store in the refrigerator, if any last that long! ENJOY!!!
