simple Fall Cookies, VEGAN GLUTEN-FREE Pumpkin Dried Cherries
A fun twist on the oatmeal raisin cookie. Fall/Winter favorite, but ANYTIME is a good time for SWEETS!
**This recipe makes about 12 glorious VEGAN cookies.
3/4 cup - non-dairy butter - earth balance
1/2 cup - maple syrup
1/2 can - organic pumpkin pie mix - farmer’s market
1 tsp - vanilla extract
1 1/2 cup - gluten-free sifted oat flour
1 tsp - cinnamon
1/2 tsp - salt
2 cups - gluten-free quick oats
1/2 cup - organic dried cherries
The video from IGTV was from a party prep, where I made a double batch. The recipe above is perfect for an at-home snack.
Directions:
-Whisk the wet ingredients then add the dry - in order.
-The quick oats and the cherries to be added last, to make sure everything else had been mixed together properly first.
-BAKE at 350 on a greased cookie sheet for 13-15 minutes,
