Chocolate Chip Energy Bites, VEGAN GLUTEN-FREE
NO BAKE CHOCOLATE CHIP ENERGY BITES
With your morning coffee, for an after-dinner treat or even in your kid’s bento box. These will be craved!
(use sunflower butter as a school lunch option that is NUT FREE)
**The recipe in our video makes 24 - but I prefer for the house to only make 12
2 cups gluten-free quick oats
1/2 cup ground flaxseed - bob's red mill
2 pinches salt
1 cup organic almond butter - Costco
2/3 cup organic raw (local if possible) honey
1 cup dairy-free chocolate chips - enjoy life
Directions:
-Mix all the dry together then add the wet to the dry and mix together, add chocolate chips last.
-Put mixture into a Tupperware and smoosh it down to make it dense and compact. Refrigerate overnight (or an hour, if you cannot wait).
-Roll into ping pong-sized balls and enjoy. Store in an airtight container in the fridge!
